On the back of my edition of The Joy of Cooking (yes, I have my own, limited, edition) are two separate quotations from the New York Times; the second one reads, in full, Joy of Cooking is the bestselling retail cookbook in American history..  To this one naturally has three responses in succession, though perhaps not this succession:

  1. What sort of praise is this? Lots of crap sells well; surely some of it can sell best.
  2. Is that as opposed to wholesale cookbooks or cookbooks never offered for sale at all?
  3. Shouldn't that be best-selling?

I suppose one no longer talks of "best-sellers" but rather "bestsellers"; still, for the adjective, it seems the hyphen is wanted.
